Oh, I know what you mean - I'm not fully in control of that bit yet. Alt-1 and Alt-2 switch the bit you're working on between being voice 1 and voice 2 on a stave, and once you've got both present, it's quite easy to continue both.
Copy-pasting likewise seems to work for the whole stave, not just the voice, and I've not found a way round that yet. I haven't tried separating out the sounds either. I've switched those rather irritating vibrato-laden choral 'ahs' for woodwind (using bassoon for men's, clarinet for women's) which I find gives a cleaner sound, but then I'm used to listening 'through' a pretty basic midi output to the voices in my imagination, so haven't felt the need to get fancy with playback. (I'm usually arranging for specific groups and I don't believe there's any software out there that can give my ears the personality of the people I'm thinking about, so I'm happy to use my imagination ;-)
Don't know how much that helps. But it is possible. And remember: patience. Even with user-friendly software, you need to put in the hours to get good at it.
